Strozzapreti pasta from Pastificio Pisani is exclusively made with Italian durum wheat grown in Pisani's own fields in Corigliano Calabro in the Calabria region. Pastificio Pisani Strozzapreti is a type of pasta, typical from Calabria, still made today by hand lightly rolled or twisted the dough with a wire and then drying them. Strozzapreti, or priest stranglers, are an elongated form of Cavatelli. Enjoy Pisani Strozzapreti with Meat Ragu Sauce. Pastificio Pisani was founded by two brothers, Cosimo and Aldo Pisani, who have been producing durum wheat for several generations in their farm in Corigliano Calabro, Calabria region. In 2002 Cosimo and Aldo Pisani decided to start a new business called Pisani & Pasta where they make authentic regional pasta using their own durum wheat semolina.
